It's national burger day....so I wanted to share one of my favourite vegan burgers!
There are soooo many tasty vegan recipes out there but this one is from a fantastic cook book called The Easy Vegan, by Sue Quinn.
Page 96-97 has six burger recipes, but my favourite is the 'Kibbe'. The bulk of the burger is made up of red lentils and bulgur wheat, mixed with herbs, spices, pine nuts, onion and garlic. It also contains pomegranate molasses....which I never have in the kitchen so substitute for some agave syrup. I like to pile up lots of burger fillings....beetroot, gherkins, spinach, lettuce, mustard, veganaise and chilli sauce!
I hope that one day there will be more veggie burgers on plates than beef in the future....I like cows so I don't eat them :)
